Founded in 1821 in the coastal city of Sanlucar de Barrameda at the very southwest tip of Spain, Barbadillo is today one of the most important sherry producers in the region boasting 12 Bodegas housing 30,000 Sherry butts, many of which are fed with wines sourced from Palomino Fina grapes grown at the family’s 500 hectares of vineyards in the Jerez Superior. Toto Espumosa de Albariza is a sparkling wine from Cadiz made mainly from Palomino grapes with the addition of a little Chardonnay, both from vines grown on the famed white soils of Albariza. It is the third generation of sparkling wines to be produced by Barbadillo, and this particular vintage has undergone the longest ageing period of all of their sparkling wines. A dry and fresh sparkler, this is very much a reflection of the terroir from which it comes.
A pale straw in the glass with an excellent mousse. On the nose, scents of honey, quince and orange peel. On the palate, dry and zesty with a balanced acidity and notes of orchard fruits leading to a lingering finish. Great with fried shrimp, vegetable tempura or oysters with mignonette.
