Domaine Breton is situated in the village of Restigné, to the east of Bourgueil and is run by Pierre and Catherine Breton who have been in charge of the estate since 1989. There are 11 hectares in all, mainly in Bourgueil but also in Chinon, and some of the most interesting wines in the Loire come from this estate's cellars. The vineyards are farmed biodynamically, only indigenous yeasts are used and all the grapes are hand-harvested from low yields. Very little sulphur is used in the wine making process and the wines are unfiltered. This is a sparkling Vouvray made from Chenin Blanc grapes and released as a non-vintage wine. It is made using the 'traditional method' (i.e.Champagne method with secondary fermentation occurring in the bottle) and is lively and zesty, making for a versatile aperitif or food wine.

A delicate straw-yellow in the glass with a fine mousse. On the nose, notes of rose, quince and candied fruit. On the palate, dry and fresh with further yeasty flavours backed up by a gentle minerality. Good with asparagus and tarragon butter, grilled perch with fennel or pork rillettes.
