Gaillac covers about 2'000 hectares of Southwestern France and is to be found just North-East of Toulouse on the River Tarn. The 37 hectare Domaine des Tres Cantous, run by Robert and Bernard Plageoles, is one of the leading organic producers in the appellation, fiercely committed to the use of more traditional local grape varieties such as Mauzac, from which this lightly sparkling wine is made. With it's distinctive appley aroma, this makes a great aperitif or good value champagne alternative.

A clear, pale gold in colour with excellent bubble formation. Distinctive aromas of green apples and citrus fruits on the nose. An exotic palate of bananas, peaches, toasted nuts and caramel. Excellent floral acidity and a toasty finish. Ideal as a summer aperitif but also goes well with savoury potato pancakes, foie gras or spicy Asian dishes.
