This is from the Cotes du Ventoux region located east of the Rhone Valley in an area sheltered from the Mistral winds by the Dentelles de Montmirail and the foothills of Mont Ventoux. The estate is run by perfectionist Sebastien Vincenti; indeed it is reported that leading biodynamic grower, Luc de Conti from Beregerac was so impressed by the quality of the wines that he temporarily vowed to give up winemaking. 'Fayard' (meaning 'beech' in French) is a blend of 50% Grenache, 30% Syrah, 10% Carignan and 10% Mourvedre and spends 9 months in barrel.
A dark cedar in colour. On the nose scents of cassis and black cherry with a hint of chocolate. On the palate fresh and lively with smoky notes and further spicy black fruit flavours. The tannins are complex yet discreet and the finish fresh and lingering. Try with pot-roasted pigeon with Parmesan polenta, daube de boeuf with black olives or a traditional duck cassoulet.
