
- Caparsa, Chianti Classico 'Caparsino' 2005
Caparsa is run by Paolo and Gianna Cianferoni and is based in Radda in Chianti in the province of Siena. The vines are grown at altitude on south facing hillsides- particularly adapted to the production of quality Sangiovese grapes. The estate is run strictly along organic lines, yields are low and quality control ruthless. This particular Chianti is a blend of 95% Sangiovese plus a splash of Canaiolo grapes, is aged in oak barrels for 2 years and is unflitered.
A ruby-red in colour. Aromas of red cherries and violets. On the palate complex and pure with tart red-berry notes, integrated tannins and a racy acidity. The finish is warm and spicy. Excellent with a variety of traditional Tuscan dishes. Try with panzanella (tuscan bread, tomato and pepper salad), pici con ragu (pici pasta in a tomato and meat sauce ) or arista al forno (slow roast loin of pork with sage and rocket).
