Description
The 60-hectare Chateau Ollieux Romanis is situated at Monseret (also renowned for its rosemary honey) in the heart of the Boutenac region of the Corbieres and has been in the Bories family since the mid 19th century. The vines are planted on red clay soil and face south east on a sheltered hillside. Carignan is king here and this particular rose is a blend of hand-harvested Carignan with a little Syrah and Grenache. Spicy with a savoury edge, this is ideal with richly flavoured rustic dishes.
Tasting Notes
A delicate salmon-pink in colour. On the nose, scents of wild herbs, raspberries and violets. On the palate, clean and refreshing with crisp red-fruit flavours of bitter cherries and raspberries with a hint of wild mint and pepper. Excellent acidity and a spicy finish. Try with a garlicky calamari salad, bourride (fish stew thickened with aoli) or roast herbed chicken.
