
- Bodegas Toro Albala Don PX Vino Dulce de Pasas 2007 (35cl)
The 7 hectare Bodegas Toro Albala is located in the village of Aguilar de la Frontera, 50 km from Córdoba in the Montilla Morales region of southern Spain. Founded in 1944 by Antonio Sánchez Prieto, the estate is currently run by the eccentric Jose Maria Toro Albala and only one grape is grown here: Pedro Ximinez (PX), the vineyards providing 30% of the estate's needs, the other 70% coming from other renowned local growers. PX grapes ripen quickly in the heat and once picked, the berries are laid out on mats in the sun in order to concentrate the sugar and flavour. Fermentation of the super-concentrated juice progresses slowly over 6 months in stainless steel tanks and is bottled immediately. It is therefore unoaked and although the wine has the appearance and texture of a fortified wine, it is an entirely natural sweet wine. This superb PX pairs particularly well with soft cheese or chocolate.
Deep golden in colour with a distinct green olive hue. Exotic nose of honey, molasses, caramel and sweet spices. The palate is rich and viscous with concentrated flavours of orange peel, caramel and fig. The finish is lengthy and perfectly balanced. Try with Guinness ice-cream (trust us!), Tocinillo de Cielo (Spain's version of crème caramel) or a salty Spanish cheese such as Manchego or Mahon.
