The 60-hectare Chateau Ollieux Romanis is situated at Monseret (also renowned for its rosemary honey) in the heart of the Boutenac region of the Corbieres and has been in the Bories family since the mid 19th century. The vines are planted on red clay soil and face south east on a sheltered hillside. The Cuvee Blanc Classique is a spicy blend of 50% Marsanne and 50% Roussanne and is unoaked. Waxy and peachy in character, this pairs particularly well with flavoursome chicken dishes.

A pale golden in colour. Look for aromas of tropical fruits and white flowers. Medium-bodied on the palate with an 'oily' mouthfeel. Flavours of apricots and bananas with a spicy backbone. The finish is refreshing. Try with a pot-roasted chicken with pork and olive stuffing, crayfish in a vermouth and cream sauce or roast suckling pig.
